Sweet Stir-fry (Original)


I am not a big veggie eater, but I decided to start eating a little bit healthier. My husband wanted me to buy a bunch of fruits and vegetables for him in order for him to be on a diet. I picked up some mushrooms and peppers along with some other things from the store. Now let me tell you, I have never, ever liked mushrooms or peppers!!

Last night I decided to do a little experiment to see if I could make mushrooms and peppers taste good. The end result---I'm in love with them now. I think you could even get your KIDS to eat this...Seriously! It's so sweet and it could be used for tons of things. You could eat it as a side veggie, or you could top chicken with it, etc. Just try it even if you do not like these ingredients. You will not regret it.

Please double or triple this recipe if you want. I just through a few things together to see if I would like it...and this is the result

Sweet Stir-fry


1-2 T. Olive Oil
1 small onion
1 Pepper ( I chose red)
4 mushrooms, washed & sliced
1/2-1 tsp. Good Seasons Italian Dressing Packet (I don't know exactly how much of this I sprinkled on, but 1 tsp. is a good estimate for how much I made)

Heat olive oil in pan on medium heat and then throw in your chopped onions. Let onions caramelize over the medium heat (mine got a little burnt, but it still tasted great). After your onions caramelize, add your pepper and mushrooms and top with your Good Seasons Italian and stir. Let all the veggies caramelize together and soften over the heat for about 5+ minutes. Serve as a side, top it on rice or chicken. Be creative! Let me know what you think!

This only made about 2 side servings or so. I would double or triple this recipe for a meal.
